glycation

The non-enzymatic reaction between the electrophilic carbonyl groups of a reducing sugar and the free amino groups of tau amino acids (especially of basic lysine or arginine residues) leading to the formation of a ketoamine (Amadori product), an intermediate of AGE synthesis.
